Gola

 

Gola is produced from the pork throat and requires various stages of processing. The first steps are to trim the meat, dry cure and season with pepper. The product is subsequently covered in lard, smoked and left to age.
Thanks to its intense flavour, the Gola exhibits its best qualities when tasted on its own or when added to sauces typically used for traditional dishes such as carbonara and amatriciana.
