Coppa is a cut from pork neck and shoulders that is carefully selected and trimmed. Once it is dry cured, it is stuffed into a natural casing (beef gut), tied by hand with hemp twine and left to cure for at least 3 months.
It is esteemed for its delicate scent, smooth texture and discreet flavour.
